Started cooking early, baked the enchiladas, then turned the oven off. Shucked 8 ears of corn outside really early this morning. Now they’re drying. I’ll make fried corn in a skillet.

Next batch of pear bread can wait. The police dept posted on FB that the heat index is expected to be 110 deg today.

Fried corn! I used 3 tablespoons of butter initially. Seasoned it with kosher salt, pepper, onion & garlic powders. As it cooked down I added 2 more tablespoons of butter. Kept it on medium until it started sizzling. Then turned it to low and let it cook 20 minutes.

It never occurred to me that people with dentures couldn’t eat corn on the cob. When my oldest was at UVI (St Thomas) I went for a visit. I had grilled corn but one friend asked for a sharp knife. My daughter asked him why? He had been in a bad accident as a teen and lost his upper teeth. So this is a great way to enjoy corn if that is a concern.

Quite impressive for early in the day! Your energy and determination amaze me, PN. Hopefully, you won't need to cook for a few days. You deserve a rest :)

Corn looks yummy! DH got two scrawny ears of corn at Nino's yesterday. Since it's not Michigan corn, we're not expecting it to be anything special, but it is a requirement for a summer holiday dinner - along with watermelon. Burgers are a must-have, as well, and DH will grill this evening. We usually par-boil the corn then put it on the grill for some nice grill-marks. Grilled Kaiser rolls for the burgers with lettuce, tomato, avocado, cheese. I made a huge bowl of pasta salad with salami and Provolone, too. We still have chicken salad, too, so no more cooking for a few days.

Well I did take a nap for over an hour. I stayed in bed reading for another hour. It is Steroid Tuesday. Figured I’d get some rest before the full effect kicked in.

My last food fix of the day was the salmon I was supposed to make the other day, and the rest of the veggies.

I baked the salmon with kosher salt, pepper, onion & garlic powders. Put slivers of real butter on top then added lemon slices. The thin part was done first of course. I trimmed it off and finished baking the thick part.

The veggies I seasoned the same way, sprayed the pan with olive oil, added butter, sautéed with the lid on.

It was delicious and I’m stuffed. I have leftover salmon for tomorrow.

Kiddo took over the kitchen next and made “Chia Seed Pudding.” I have no idea what that is. I can’t eat it because it has coconut milk. She says it’s not a dessert.

My daughter makes Chia Pudding frequently. I am not a fan, but she loves it.

I haven't made chia pudding recently but was making it almost daily for a while after a cooking class I attended at the gym several years ago. Chia seeds are pricy and turn rancid if you don't use them efficiently. Here's a recipe that I used instead of the one that the RD made in the cooking class. Chia Seed Pudding

I’m not sure if my open jar of coleslaw dressing is still good. If not, I can get a new jar. Another nice cool dish in hot weather.

I tossed all the mushrooms because they were too far gone. We love apples sliced up & chilled in the summer.

In addition to pear bread, I’ll need to make some more banana bread. I don’t have anything on the schedule for tomorrow. I may do some baking at dawn.

Lettuce leaves make a really nice cup for the savoury mince of your choice. Pile a bit in, fold it over, pop it in your mouth... a bit like a soft taco. We do a really unconventional San choy bow (not following this recipe, we have so many allergens to avoid) most of the time, but you could go Mexican, Tex-mex, south east Asian...

But whatever you make, you can go through a lettuce far quicker than you'd imagine, and it sits lighter in your stomach eating three or four lettuce cups than if you did it with tortillas. And I don't know about those frilly ones, but those Romaine look a great shape for this, like our Cos lettuce out here.

When my youngest was first diagnosed with a slew of food allergies, I used Romaine wraps in her lunch box. At the time she would eat lunch meat so I replaced the bread. I like to use Romaine as taco shells if I want a handheld or just make a taco salad.

I just googled, Romaine and Cos are indeed the same, just a regional difference in name.

I haven't made chia pudding recently but was making it almost daily for a while after a cooking class I attended at the gym several years ago. I get Chia seeds at Whole Foods for my daughter, they are frequently on sale. She keeps them in the refrigerator. Besides pudding she uses them in smoothies and in some of her recipes.

We did some grilling for the 4th. Too hot to cook inside. Found a little market in town that sells some local fruit and veggies. Not cheaper than the supermarket but they seem fresher and tastier.

We made some hobo potatoes, got some brats on sale, some fresh sweet corn and I made a cucumber watermelon and jicama salad. Ribeyes were on sale so I picked some up for the freezer. Got a pork butt roast for $1.50 a pound and stuck that in freezer too.

Got nailed with a migraine the following morning, figure it’s stress. Was one of my bad ones where I couldn’t even open my eyes, tingling in the hands, nausea, didn’t even want the dog to lay next to me. Luckily(?) it only lasted about 8 hours. Appetite is slowly recovering but still feeling off sort of almost hungover. Cucumber watermelon salad has worked well on the sensitive stomach, skipping the heavier food for now. Hopefully that will be my only severe one for the year. Haven’t had one that bad in about a year. Anyone who has them routinely, you have my sympathies.

I have Multiple Myeloma and my “cocktail” includes Dex (steroid) every Tuesday. I typically don’t sleep much Tuesday & Wednesday.

To deal with the restlessness, I cook and bake in the wee hours of the morning. Sometimes, I even clean the bathroom or vacuum.

Interesting….What is the chia seed pudding? I mean…. not sure how to ask, but if not desert what is it for? Is it like a meal replacement? TIA
