Food and Recipes while under Coronavirus quarantine #8

They’re always super nice in our Aldi. Once I forgot my bags. I commented on it when I checked out and the cashier gave me boxes.

I know some of us have mentioned shopping at Aldi’s, and so I thought this would be interesting to post.

Aldi’s is experimenting with charging a pre payment fee before customers enter the store.

cannot read the whole article.... do they have shoplifters or folks who eat things in the store?
The local Whole Foods used to have a very commodious and kind of open eat in area and they redesigned it for security purposes. Also a local gas station chain now asks for a pre payment if you are paying cash because people started to leave without paying. (personally all my utility rates were raised this year - ug- so I imagine people with even less $ are hurting even more and honesty is going out the window)

This egg thing is driving me crazy, and we actually don't really use many to begin with, really. I put poached egg on salad, though (yummy). I'm trying to avoid eggs as much as I can while the price is so inflated, although we'll probably be able to score a dozen this week because we can go to the normally priced store. I read in an article that the prices "should" fall in I think they said the second quarter of 2025. (Checking.) Yes. That's the prediction. But only maybe. If the bird flu thing gets worse, maybe not. Saw some egg substitute ideas on here already, and grateful for those. Looking for more here... Mmm. I mean, cheese? I could do more cheese on the salad. With maybe a warm vinegarette? That could work. HMM, and warm homemade croutons. Could always try a panzanella salad, I've made things close but not authentic panzanella. OR just like do a regular salad and add breaded fried chicken crumbled up.

There's a black market for cigarettes now, so I hear. Hope we don't end up with a black market for eggs, LOL.
A little pesto in the salad, walnuts, more cheese

Sky-high here, eggs are usually about $2/dozen. Now it's like over $2.50-$3.50 for half a dozen. Cheaper if we do the dozen, still over $4 (and that's from a reasonably priced grocery around here, not the one that's priced like we're in Manhattan.)
2 weeks ago, with some eggs at home and just snooping around, I saw 24 eggs at Sam's Club for $8.24....naively I thought that's over $4 /dozen- not a good deal. They had a sign that said you could only buy 2 boxes too. Shortly after, egg prices around me started sky rocketing.

OMGosh, I'm getting an air fryer!!! Getting gifted an air fryer (partially by myself, lol). I'm figuring out all the cool things to make with an air fryer. Gonna try donuts (not yet, tho), wings (right away), fried chicken (fairly soon), hot dogs (to see if I can get the red hot effect). Fries for sure, that's why I want it, for the most part. Latkes and meat pies. I don't think potstickers are a good match for an air fryer, tho, but I might be wrong. Egg rolls, tho, yeah, I would think. Cheese sticks!! And nice fried halloumi bricks. And crispy rice!!

The way other people might respond to a mink coat or a diamond necklace-- that's how I feel about an air fryer, LOL.

Ok, don't do beets in an air fryer. They dry out even tho I coated them in olive oil. Well unless you like them crunchy! LOL! My daughter brought one while she was here and I wasn't impressed.

Brussel sprouts, though? (And I wonder if I'll be able to dehydrate with this gadget. With some I know you can.)

My daughter did brussels in it and they were fine. Maybe she used more olive oil than I did. Or maybe root veggies aren't adaptable to air frying.

I am going to be waiting days now on this fryer, and I still can change on the price/model. I saw one that has a lot of interior space and I think I'm going to go with that one, it looks more like a convection oven. Since it's my first one, I was thinking maybe I'd suck it in and go with one of the little basket models, but I can't fit a pizza in there and I can only do like five or six wings at a time. I don't know, I'm wary of those little basket ones with the amount of use that thing's going to have, LOL, I got the "super saver" deep fryer years ago and it had a meltdown on me (LOL, I used it a lot, lol). (I now just do the deep frying in a big pot with a special thermometer.) I want my air fryer!! NOW, lol!!

My daughters had two wire mesh shelves that slide in. They were reasonably easy to clean too. I just don’t like how much counter space any appliance takes up. My kitchen isn’t that big! I remodeled it when I bought the house 6 years ago. I added the little island so I’d have more counter space.

My oven has a convection feature that I’ve never tried. I should get the manual out and read it. It’s probably perfect for my fish when I don’t want to go to MsDonalds.

I had a pretty tasty fish sandwich at Arby's the other day. I'd never ordered one there before.

Wow. The talking heads on CNBC are talking about the price of eggs, wondering if people will be saving up for eggs and not making other purchases. To me, that's WAY out there. I don't even know where Scott Wapner came up with that. lol I can't imagine eggs ever getting so expensive that people would be saving for them and not making other purchases. But, he did toss that out for discussion to Tom Lee who was on his show!

Speaking of the price of eggs... I bought a dozen today at Trader Joe's, who still has them for $3.49 a dozen... except now they have a sign up saying 1 carton per purchase. I wanted 2, not to hoard them, but because I make very infrequent trips to grocery stores once Covid hit and I've been cutting back on meat and eating more eggs, cheese, and soy products. Sure, I could buy more soy products, but ya can't make an omelet out of them! LOL

actually: tofu scramble....vegan option in a lot of restaurants but I am not sure tofu is less $$$ than eggs.

there is never enough counter space
there is always some appliance with a "too short" cord
or some fold out part that hits something (coffeemaker lid and cabinet, I am talking to you)
kitchen looks perfect in that photo but, ha ha, not in use.

Air fyer's gonna be here soon! Still holding out for the bigger model so I can make a decent amount of food in there. Am researching things to make. So I was thinking, what about like a hamburger wellington?? And like sear the burger hunk, wrap in some relish (drained to extent possible), some grilled onions pressed into the meat, maybe a little dijon mustard rubbed on, too. OR like McDonalds sauce copycat recipe. As long as the cheese is wrapped firmly around that portion where there are moister ingredients, I would think it will still puff up. I looked online, there are already burger wellington recipes out there, but they use bacon. I just don't want the bacon on there, I think. I want like a cheeseburger wellington, LOL.

friend of a friend has 2 air fryers! so he can make 2 different things- one big one, one small one. Does anyone know if restaurants use these on a larger scale?

So could this actually be possible? Because in order to incubate eggs successfully they have to be kept warm until they hatch.

According to the TikTokker@thecaliforniahome, a case of one dozen fertile eggs bought 24 days ago from the market eventually hatched after just three weeks in an incubator.

In an early River Cottage, Hugh's friend who is a chicken guy says that in the past, he's taken eggs from the fridge to add to a clutch to make up the numbers and they've hatched. And chickens were his thing, so I believe him.

These were his own eggs, so presumably there was a rooster present during the crucial time.

FWIW Liquid and powdered eggs are an option! Maybe not the most economical or tasty but in an egg crisis I'd feel better having some stashed away. You can also freeze whole eggs.

I've been wanting an air fryer but have a feeling I'd become dependent on it lol.

I always thought eggs had to stay warm or they wouldn’t hatch. Maybe I should buy some fertilized eggs and hatch them!
