I bought salmon 2 days ago and also had the beginnings of a cold. I tried to smell it to see if it was ok. I didn’t smell much of anything but figured if it was rancid, I’d probably notice.

Between coughing and fools setting off fireworks until 1:30am, I only slept about 4 hours.

Anyway, I baked it, likely a little too long.
That’s ok tho, I’ll eat it anyway. No point in letting it sit in the fridge until dinner.

Fresh dill from the garden, like my daughter’s boyfriend did last week. Sprinkled it with salt, pepper, garlic powder. Added lemon slices, bits of butter.

DH was going to make Parm/panko crusted chicken breasts on Tuesday, but neither of us had much of an appetite after we got our Covid shots. That's on the dinner menu today served on a bed of arugula and baby spinach. I'm also going to make split pea soup with half of the stock that I made on Monday. I'll use the other half for Great Northern bean soup this weekend.

Most of the snow had melted by Christmas, but we had snow for New Year's. It's also bitterly cold. We went to bed at 10:00 last night but were awakened by fireworks between 11:30 and midnight. Happy New Year!

I’m freezing some extra leftovers today. The kids took a lot of it home. We food prep so much that a holiday meal is normal batch cooking for us.

3 bags of turkey breast.
2 bags of chunks from the spiral sliced ham.
Diced up the extra celery.
Dish of rosemary roasted potatoes.

I still have flat Italian Green Beans from the garden. I may blanch those for later. I will definitely grow these again.

The watermelon radishes are huge! My friend loves them so I gave her about 5-6 last night at dinner. I haven’t tasted them yet. I have romaine & butter crunch lettuces ready.

The Early Wonder beets didn’t get big at all. The multicolor beets (pictured) are not big either. I devoted a 3’ x 6’ bed to beets. I’m disappointed because I love beets. I thought it was cold enough here for them to grow to a decent size. I left about 1/2 the bed planted so maybe another month and they’ll be bigger.
