ROLL TIDE!!!
I love split pea soup. Actually I just love soup. I could probably make a different soup recipe every day until spring and happily eat it.DH was going to make Parm/panko crusted chicken breasts on Tuesday, but neither of us had much of an appetite after we got our Covid shots. That's on the dinner menu today served on a bed of arugula and baby spinach. I'm also going to make split pea soup with half of the stock that I made on Monday. I'll use the other half for Great Northern bean soup this weekend.
Most of the snow had melted by Christmas, but we had snow for New Year's. It's also bitterly cold. We went to bed at 10:00 last night but were awakened by fireworks between 11:30 and midnight. Happy New Year!
You are so lucky you still have ham! We had a tiny little ham this year, it's long gone. It was so yummy.Today I'm going to make Great Northern bean soup with the rest of the chopped meat from the bone of our 12# spiral-sliced ham. There's still a lot of sliced ham left, so I wrapped it tightly with plastic wrap, then foil, and put it in a Ziploc bag in the freezer. We were getting "hammered" from eating ham daily since 12/27![]()
I do really miss beans in soup. Beans and pulses are off the menu because of partner's FODMAP issues. We used to do a wonderful white bean and chorizo soup. And a mock pea and ham soup with chickpeas and lentils. There's not much point making a whole pot if I'm the only one who can eat it.We finished the split pea soup and continue to enjoy the Great Northern bean soup. I haven't made Pasta Fagioli for a while, so I'm making a pot today. Italian sausage, carrot, fennel, leek, garlic, kale, chicken stock, tomato paste, diced tomatoes, red kidney beans, Italian seasoning, ditalini pasta, and a Parmesan rind. A delicious, hearty soup that we'll enjoy for several days.
US National Figure Skating Championships start today. DH and I love watching figure skating together. For me, figure skating season is my happy time of the year. And, this year, there's also the Olympics!
Did Santa bring you anything for your kitchen? I absolutely love my shiny new red Kitchen Aid electric tea pot. I don't drink coffee anymore but enjoy tea (decaf or herbal) morning, afternoon, and evening. I have a cherry red Martha Stewart tea kettle, but it takes a while for the water to boil on the stove. The electric tea kettle is super quick and is just the right size to fill my little Le Creuset teapot.
For soups, could you not just add beans and pulses to your bowlwhen the soup is finished? You can cook a batch of beans, and then freeze them with a little liquid, in small potions, enough for a meal.I do really miss beans in soup. When you put beans in a soup and cook them in, they break down and thicken and create the texture of the soup. Adding at the end would still probably be nice, but it'd be a broth with beans floating in it, which wouldn't be the same. Don't mind me, I'm just missing something that isn't practical to make anymore. We're in the middle of a heatwave and tomorrow and the next are going to be the hottest days here in about a year... so I'm making soup, because talking about it made me want some. It's 10:30pm and about 30C still indoors here, despite air conditioning and a fan.
I'm making the spicy peanut butter one, because that one I don't have to eat on my own.
Potatoes, sweet potato, carrots, parsnip, and some leftover roast veg from the other day. No celery this time because we don't have any.
