All looks delicious!

I'm going to try making omelettes in the waffle maker in the morning. Has anyone else made them that way?
I’ve made hash browns in the waffle maker but never tried omelettes. I always thought it would be more difficult to clean egg from a waffle maker than a skillet.

Let us know how they turn out.

I've never owned a waffle maker, so I haven't made omelets in one. I have made omelets-in-a-bag but haven't done this for quite a while. It's a fun cooking project for kids as long as the actual cooking part is supervised due to a pot of boiling water. Assorted meats, cheeses, veggies can be offered so each child can select their own ingredients. Adults like omelets-in-a-bag, too :D


DH can now have "regular" food following his tooth extraction, so we are having orange roughy and kale sauteed with bacon for dinner.

People who have so many issues with foods that they cannot eat for one reason or another shouldn't go to restaurants. Most dining venues try to accommodate all patrons, but they cannot please everyone. Restaurant menus are posted on their websites, so prospective diners should research the dining venue in advance so they have a good idea of what is offered and what they might be able to eat. A litany of what one can't eat for one reason or another is also annoying for other restaurant patrons. JMO
100% agree and considering I have 27 food allergies, it irritates me to no end when diners are rude to their servers. If you have that much trouble, just stay home.

Everyone knows not to bother inviting me if it is an Asian themed food restaurant and I'm not the least bit offended.

JK texted me before our dinner the other night asking if I had reviewed the menu in advance. I was so pleased that I'd have so many options.

Neither of us were in the mood to prep or cook last night, so we got Jet's pizza. I had a piece for breakfast - reheated in microwave. Never did get the cold pizza for breakfast thing in college - yuck!

Just finished prepping veggies for soup. After our cleaning lady leaves, I'll toss the veggies in the slow cooker with the veggie stock that I made previously. Later in the cooking process, I'll add a can of cannellini beans and ditalini pasta. Dinner done for today and tomorrow. Couple of busy days ahead...

When I was younger, cold, leftover supreme pizza from Pizza Hut was my favorite breakfast.

My friend KB treated me to brunch after my cardiologist appt. We went to KeKe’s Cafe.

I had the classic breakfast platter. 3 Scrambled eggs, sliced red potatoes as hash browns, that had way too much pepper, grits with butter and an English muffin. I think I’ll be full until dinner! It was good as usual but next time I’ll ask them to dial back the pepper.

KB had the breakfast wrap with eggs, feta cheese and spinach. She said it was delicious.

Their lunch menu is always good too. They always make you a tea to go which is greatly appreciated here where the sun just never quits.

I've had a busy and somewhat stressful week that is finally coming to a close. Nothing to do today but relax and watch some recorded TV shows. DH and I had nail and hair appointments on Wednesday, having brunch in between at Shine Cafe near the hair salon. DH had a corned beef hash omelet while I had the Eggs Benedict Florentine (English muffin with ham, tomato, and spinach, two poached eggs, Hollandaise). After our hair appointments, we went to Nino's for a few grocery items and to order flowers and balloons for a gathering at our home yesterday following my late brother's military memorial service. After our stop at Nino's, we went to Picano's to pay for our small catering order and confirm delivery time.

I lost one of my brothers last November. He was a Vietnam veteran who served as an Air Force jet mechanic in Thailand. He was entitled to full military honors with inurnment at Great Lakes National Cemetery in Holly, MI. Since all committal services are held outdoors, I thought it best to wait until spring for the ceremony. It was absolutely gorgeous yesterday - a picture- perfect day with glorious sunshine, blue skies, upper 60s, gentle breezes. The ceremony was brief and included a lone bugle playing Taps, a three-gun salute, ceremonial folding of the flag that was presented to me as next of kin (my brother never married) along with a Presidential certificate honoring my brother's service in the Armed Forces. I was also presented with the three spent casings from the bullets fired in my brother's honor, but I gave them to my surviving brother.

We were so glad that it was a beautiful day for our guests to eat outdoors. As always, Picano's food was delicious, and everyone enjoyed the salad, garlic rolls, mostaccioli w/tomato sauce, pizzas with ham or pepperoni, and chocolate cake. There are leftover rolls and mostaccioli for DH and me over the weekend. Ordinarily, Picano's would not deliver such a small order, but since we are respected regulars, the manager agreed to have our order delivered as it would have been inconvenient for us to drive 35 miles north to the cemetery then drive 45 miles south to pick up the food, then drive home. One of our favorite waitresses agreed to come into work early to deliver our catering order. After our guests departed, DH and I cleaned up the kitchen, deck, and patio. We were exhausted and off to bed at 9:00PM.

Kiddo will be home the week of May 18th. So this morning I went to the big monthly food pickup so I can get stocked up in advance.

My friend is going to take the sausage. I don’t like any sweet flavored meat or sweet flavored veggies.

I have the ground meats and the chicken thawing in the fridge. I’m going to cook the ground meats together (lamb & beef). Then section some for taco seasoning and some for spaghetti sauce. Then I can freeze it in containers. I might make a few burger patties too.

The chicken I’ll put in my big crockpot and put cream of chicken soup over it. If one can isn’t enough I have a can of cream of onion also. Mix them with some water add some fresh herbs from my garden. I’m not a gravy person generally but it does keep the meat moist when it’s frozen. I can thaw it and put it over pasta or rice.

Many of the drinks have a late April, early May best by date. But they should be fine unopened for a couple more weeks. Same with the yogurts and dips.

I’m not sure about the oranges. They look like the kind you make juice with. I need to make some mini banana breads. I have a small handful of blueberries left so I think I’ll drop those in the bread batter.

I went to make a salad the other night and my romaine was dead. So now I can have my salad.

No idea what I’m supposed to do with a giant box of flowers. My friend, JK is going to take some for the cemetery.

It’s a good thing Neeko & I took naps since I have a lot of food to prep!

My strawberry plants were dying quickly in the sun and this awful drought. So Neeko and I dug them up out of the garden bed and put them back in pots. He was fascinated with the smell of them. Even when I was watering them he kept his face in the way.

I only had 4 original plants but some babies grew in little spots. So I put those in the 5th pot.

Neeko kept an eye on the ‘hood while I went to the food pickup.

^ Looks like a nice haul with lots of possibilities. Can I have the tulips? Besides yellow roses that I had in my bridal bouquet and DH gifts me for our anniversary every year, I love tulips in any color. Mom planted them around our home when we were growing up. They were in a bed with hostas in the front yard and in a row across the back of the house.

Speaking of pizza. I tried something new the other night when making homemade for dinner. I found a recipe in my sourdough group which uses sourdough starter discard for the crust. My husband and the kids said it was the best they’ve ever had.

It was in between a thin and traditional, crispy and deliciously sour. Added a unique taste.

My guests left yesterday for the big party in Boyacá. No doubt dancing now to the music from local bands. It is a glorious sunny day! Think they will enjoy this first trip to South America.

Food was all fine, just had to step up on quantity and increase meal numbers as they eat more frequently than we do. All ok.

They loved the vegetables, we are lucky with the variety and quality and all year round availability due to not having seasons.

Rut finished off making the final touches to her party dress. Will look great. Treated her to manicure and fancy blow dry.

Really nice having them to stay. They will be back after the party for a few days and plan to take them to visit the Gold Museum and oldest part of town, all very spectacular.

And then we get more, different guests! The farewell lunch will be here. P will make ajiaco, typical Colombian dish, his version is the best we have had and he really enjoys making it.

I'd been wanting a different taste, and the variety of packet or jar mixes we can use for meal starters is limited, but I found a packet mix for Mongolian Lamb that was gluten free and only had a small amount of FODMAPs, so okay for some days for partner.

Couldn't get lamb stir-fry strips, so bought a kangaroo fillet and partner cut it up super fine. Kangaroo is a lot like venison. It's got a gamey flavour and is very lean, so you either need to cook it for about half a day or no more than a minute, or it's like chewing gum. We threw it in right at the end and it was melt in the mouth tender.
