All of this points to a wolf attack IMO. I don't think there is any foul play by a person.
First, are there really notable numbers of wolves in the area? I see there are some occasional ones, but...
Do the really attack humans? In human settlements? In broad daylight?
My country has notably more wolves than France and there has been not a single wolf attack on a human during at least 50 years, possibly more than 100 years.

I seem to recall the wildlife aspect was talked about here early on so there would be info in earlier threads.

Would be extremely easy to verify if so.
Dogs - wolves - can & do eat bone, so the bite marks on the remains will be easily visible.

No doubt, having been out there through a winter, smaller animals (foxes - rats - perhaps others ) will have had a nibble. I don’t think it particularly likely he was taken alive, being so close to a town.

2 cents— Maybe he unfortunately did pass away in a stream that was running fast in July but it eventually slowed down or dried up enough to reveal his remains? Then scavenging animals became involved?
Snow (and then the melt in probably the last month or so ) would be the obvious factor over animals, predators, aliens etc.
