Grocery shopping tips during Coronavirus quarantine #3

Thank you! I'm sure it's delicious :) We stopped at Nino's after my eye appointment this morning and got some necessities and a couple of splurges. I rarely cook Prime Rib more than once or twice a year, but this week's special price was too good to pass up a 5# roast. We'll have it with smashed potatoes and veggie for one meal, then I'll make Beef Stroganoff or Mushroom Barley Soup with leftovers. They were also featuring a bone-in frozen turkey breast that will be enough for a couple of meals. Tonight I'm making a casserole with wild rice, veggies, and chicken thighs.

So when is your latest cookbook scheduled to arrive on the bookstore shelves? I’d like to reserve an autographed copy, please.

I'm burned out on recipes, menu planning, cooking, etc. in recent weeks, so any further cookbooks are on the back burner :D I pre-ordered Katie Lee Biegel's new cookbook that is due next month. Maybe I'll be inspired and have a fresh outlook on cooking in the spring.

This morning there was a USDA food pickup at the stadium, I had already picked up produce earlier in the week. But I didn’t want to pass up the staples they give you.

I was pleasantly surprised to get more fresh produce. I am happy to have two 2.5 lb packages of ground turkey. I’ve never had Gazpacho soup. I’ll save the frozen portobello mushroom sauce for one of my friends. My youngest loves split pea soup that her Gma taught her to make. I can’t think of anyone I know who drinks grapefruit juice tho.

Now to figure out how to cook acorn squash. They gave me one last week too. So now I have 1 medium and 2 small ones.

Has anyone tried Beyond Meat products? Nino's has been featured all Beyond Meat products for 20% off the last couple of weeks. I'd like to try something but don't know what I should get. Any suggestions? The only meat-replacement foods that I've had previously are Morningstar Farms (black bean burger patties, sausage links, etc.).

This was my two produce pick ups this past week. They intentionally give you more than you need. They tell you to take it and share it. Boy did I do a lot of sharing. I prepped everything for me and my daughter. I still had lots left over. So I met up with my friend Karen and shared with her and her family.

My friend Vicky and I usually trade out things but I couldn’t meet up with her this morning. An hour later I get a text. “I got this big yellow thing. I don’t know what it is. What do you do with it?” I chuckled but I know she’s Hispanic and probably isn’t familiar with spaghetti squash. I told her what to do with it. Her response: “If I’m feeling ambitious, I’ll try it.” LOL!

My daughter likes their burgers but only buys them on sale. They’re pretty pricey and it is a rare purchase for her budget.

I used to love grapefruit juice but the acid isn't friendly to me any more :( In fact, there seem to be many foods/beverages that don't agree with me lately: spicy foods, coffee, even my beloved red wine. I had the worst night of heartburn ever after the pan nachos that we had on Wednesday :eek: I'm really going to have to be careful with food/drink choices from now on.

Not a fan. I prefer black bean burgers. The "Beyond Meat" has a texture issue, and smell to me. Of course, my only time was eating a patty from Burger King, but it was so off putting, I had 2 or 3 bites and tossed it. And believe me, when I throw away food....

But maybe it is different prepared at home.

DH just left for his weekend swim and will stop at Nino's afterwards. I added Beyond Meat product to my list and suggested that he get one item that isn't too pricy in case neither of us cares for it. Burgers would be best because I can doctor them up with lettuce, tomato, cheese, condiments and serve on nice bread or roll.

That is our favorite way to have Beyond Meat burgers. Add some fries and you are set! :p

Nice selection! I always love your posts. As for the acorn squash, I cut them in half with-wise, scoop them out, baste inside with oil and bake cut side down til soft. Maybe 45 mts at 350. Turn them over, fill with butter or whatever you use and some brown sugar. Put back in the oven until it all melts inside.
ETA sometimes you need to make a little foil cup to hold it up after you put in the brown sugar and butter.

I like Beyond Meat once in a while, but didn’t care for Burger King, either.

DH got a 1# package of ground Beyond Meat that will probably make 3 burgers. The regular price is 10.49 - so about $2 off on the sale. We'll give it a try but at those prices, I doubt we'd get it often.

DH got me a dozen yellow roses with baby's breath, a small box of Godiva truffles, and a paczki with cannoli-cream filling for Fat Tuesday.

Nino's was featuring their awesome rustic cranberry pecan boule this week, so I put it on my grocery list. I decided to have a slice for an afternoon snack and the usual "boule" is heart-shaped :)

I was just reading some online recipes. Most show what you described, making them sweet. That sounds odd to me. I love squash but I can’t imagine putting any type of sugar on it.

I did find some that have more “savory” seasonings is what they’re called. But what really sounded good was squash with veggies and rice in them. I was thinking I could sauté yellow squash, zucchini, tomatoes with garlic, onion etc. Then I realized my acorn squashes are probably too small.

So I will go play with my veggies and see what I can come up with. Maybe just roast everything together. God knows I need to figure out what to do with that 2 lbs of garlic too!

ETA photos - decided to raid the spice cabinet. Rosemary infused olive oil, Maine Sea Salt, garlic, onion, pepper. Put a little water in the pan even tho the foil is coated with cooking spray.

I have also made them savory. Try stuffing them with sautéed veggies of any sort and rice or a grain. Bake them til done! There are good recipes out there but I usually wing it. OR stuff them after you bake with hot fillings, since I see they are baked. They look lovely, BTW.
