I have made this for years and we still love it...

Chicken Biscuit Pie
--------------------------------------------------
1/3 cup butter
1 onion, chopped
1/3 cup all-purpose flour
1 1/2 cups chicken broth
2/3 cup milk
1/2 teaspoon salt
1/4 teaspoon ground black pepper
1 cup frozen green peas
1 cup frozen diced carrots
2 cups cooked, shredded chicken meat
2 cups all-purpose flour
2 1/2 teaspoons baking powder
3/4 teaspoon salt
5 tablespoons shortening
3/4 cup milk

Directions
Preheat oven to 450 degrees F (230 degrees C). Butter a 2-quart casserole dish.
In a large saucepan, saute chopped onion in the butter. Stir in flour and cook for 1 minute. Add chicken broth and milk. Heat to boiling, stirring constantly. Reduce heat to medium and cook and stir for 2 minutes more. Season with salt and pepper. Add frozen peas and carrots and cooked chicken. Pour into prepared casserole dish.
In a medium bowl, mix together 2 cups flour, baking powder, and 3/4 teaspoon salt. Cut in shortening until mixture is crumbly. Stir in milk just until dough is moistened, then drop by spoonfuls onto chicken mixture.
Bake at 450 degrees F (230 degrees C) for 12 to 15 minutes, or until biscuits are golden brown, and cooked on the bottom. This tends to bubble over so I place a piece of aluminum foil under the pan to catch the drippings.

Yummy! Thanks for this. I make something similar using a two-crust pie dough (frozen works fine). I think I may try this one tonight! It is also good with a bit of poultry seasoning added.

Another one of my favorites

SALMON PATTIES

1 (15 ounce) can salmon, undrained

1 egg

1 sleeve of saltine crackers, crushed

3/4 cup cooking oil (I use canola oil) for cooking

Heat the oil in a large skillet. Combine the rest of the ingredients in a large mixing bowl. Using your hands mix the ingredients together and shape into patties. Place the patties in the hot oil and brown on each side. Turn the heat down and continue cooking on low for about 20 minutes turning often. Let cook until the patties are brown and crusty.



Note: You can add onion, green pepper and some people roll theirs in cornmeal but the only way we likes them is the recipe above.

mine are similar, but I do use fine chopped onion and seasoned bread crumbs in place of the saltines. Do you remove the bones and black gunk? I do ... critters love salmon days. :giggle:

Totally get no car--DH sold my car to Dr because I stupidly though I could drive his Saturn clutch--stupidly thinking they were all same....sadly nope!!! Then the truck was around but that's hard for me since I have no depth perception due to lazy eye....one Dr is driving that now since her car died within month of buying it (still pizzed about that transaction)---we are hoping and praying her sister bf will fix it cheep---but we shall see. Just want something positive. So tired of the dark cloud over us 😕

I'm here Daisymae, just kinda quiet today. My mother died forty one years ago, so yeah many thoughts and feelings going one. I've been off reading about Chance Walsh. That poor little baby boy. Not loved or wanted in his short seven weeks. Dad beat him to death and they put him in his crib to rot, and when the smell became to much for his mother, dear dad wrapped him in several garbage bags and put him the closet for a week, then they buried him in a hole where people dumped trash and went on vacation for a new life. Dad has had seven, yes 7, children taken from him before this little guy, mom had several removed also. They had a son that died the year before at two weeks from a UTI, but now LE wan't to take another look at that.

Dausymae I have never felt so bad in my life in looking at the bruises on him. The one photo of him sucking his thumb, if you look down at his legs, his right knee and leg are bruised, and his left from the crotch down what looks like a terrible diaper rash and more bruising.

I always debone and take the black junk out and use onions... LOL I usually use 2 cans of salmon because of that. It's good reheated the next day.

I thought the projected winter forecast was interesting. According to the projections from local weather persons around here, they are calling for 10-13 inches of the white stuff and saying if the first snow flies in Oct. we will have a very snowy winter. Today is nice out, high will be around 78. But rain coming in the weekend and then a very large cold front with wet weather, so we just might get that 'flying snow' in Oct!!

I'm sorry you are having dark clouds hanging over you...will say a prayer for brighter day with plenty of sunshine in your life :) :hug:

Very cool day yesterday.

Had to go into town, dumped 1/2 gallon of oil in the truck, crossed my fingers that I'd sustain a decent oil pressure...:facepalm:..hit the bank, O'Reilly's (for MORE back up oil), and Safeway for dog food (gotta keep the wuffs happy).

Last stop, "Fixx Bros", Mike the mechanic and his side kick.

And I sat on some steps and tried to hold myself together as they turned the engine on and inspected my truck. $849 into it and it still leaked, and the tears started creeping down my face. I had dumped over $3K into that engine previously with a mechanic in Prescott who basically took me to the cleaners, he NEVER did fix the leak, and I had no way to take him to court, 30 years in business and how do you go after a guy who services Law Enforcement vehicles? I could have bought a crate engine, had it installed and still had money in my pocket. I felt utterly defeated.
I halfheartedly told Mike I had my .357 with me and I could just put the truck down, a few shots to the engine and that's all she wrote.

Mike and his guy went back into the office for a bit, and I watched big dark clouds rolling in........more wind and rain ready to cut loose. I really LOVE the rain, but it just wasn't bringing out that child like fascination at that moment: I was thinking how I was going to be able to get back home and not get stuck in the mud, have my tires spin, and in the process seize up my engine.
Mike came out, and Karma kicked in. He was in talking to Toyota, ordered a new harmonic balancer, another new main seal, and he and his helper decided to do the entire job gratis, no charge for parts or labor!!!! I don't think either of those guys expected the big azz hugs I gave them!!!

Friday I take the truck in at 8:00, they have a big comfy chair in the office, told me to bring a blanket, there'll be coffee and donuts, and if I want to take a snooze while they fix the ol' truck, I'm more than welcome to.

Sometimes unexpected things happen, good things, things that reinforce why I treat people how I would like to be treated. It's pretty awesome.

My truck fishtailed once in the mud on the way in, smoothed it out, got my gate open, and was just getting the dog food out of the truck as the rain and wind started up. The wuffs and I watched as the lightning and rain came down, it was so cool.

Yesterday was the best!:happydance:I have a feeling the positive energy from all the SB kids had something to do with it, a very humble and huge thanks to all of you!:loveyou:

Just getting here... whew... the Huz is home!! :happydance: and I've been running around like a chicken with it's head cut off... LOL! He took a nap when he got home; than made himself a turkey sandwich and Ovaltine. Now he's at his favorite spot - on the computer! That's the only thing he said he missed, besides me, of course, :D was his computer. Now he's downloading the two Formula One races we missed, my Good Wife I missed two Sundays ago - had to watch the Niner game! :) and a bunch of other stuff!



Good! And totally agree on it SHOULD have been murder!! :gaah:

Sounds like your DH is doing well. Glad he's home. Home always makes a person feel better, IMO.

Aww, thanks daisymae. They are "clearer" for the most part, but feel allergy-aggravated today. If it's not one thing, it's another. At least I don't get bored with the same old symptom every day. :giggle:
