Potatoes Dauphin

4 large russet potatoes
6-8 cloves garlic, minced
2 cups (about 1/2 pound) shredded Gruyere cheese
Salt and white pepper to taste
1 1/2 cups whipping cream

Peel potatoes. Cut into 1/8-inch-thick slices. Soak in ice water for several hours or overnight. Drain well and pat dry.

Preheat over to 400*.

Place one quarter of the potatoes in a single layer in a 9x13 or 7x12 baking dish. Sprinkle with a quarter of the garlic and a quarter of the cheese. Salt and pepper to taste. Repeat process three times. Pour cream evenly over top.

Cover and bake for 30 minutes. Remove cover and continue to bake until potatoes are tender and top is nicely browned (about 30 minutes). Remove from oven and let stand for 10-15 minutes. Serves 4-6.

Ok they are in the oven, covered with foil, in a 9 x 13 glass dish at 400 degrees. After 30 minutes I take the foil off and do 30 more minutes, right? I guess when a fork goes thru them they’re done.

I had some slices left over so in the morning I could make my breakfast skillet!!

Just keep an eye so they dont dry out. Fine balance between cooked potatoes and the dish going a bit dry sometimes. I bet your house smells great!
 
I took them out of the oven but there’s some thicker slices that are not fork tender. I didn’t want to scorch the cheese tho. Maybe as they cool and absorb the mixture they’ll soften. Reheating them will cook them some more too. They certainly smell wonderful!!

It seems that Covid may have left me with prediabetes. Had a call from the diabetic nurse this week. Anyway like all sensible people (?!) I just ordered a chinese feast to be delivered... peppercorn prawns for me.. then it's on to a lower your blood sugar diet :(
Sorry to hear this HKP. Just when you were getting a handle on your lingering Covid symptoms! As far as I know prediabetes is reversible with some dietary changes. I hope that happens for you! My dad had type 2 diabetes and we had to help him with his diet to get his sugar under control. The main thing I learned was to watch the sugar in healthy foods like fruit, particularly bananas and grapes. He would have half a banana rather than a full one as a portion etc. And his five a day was geared more towards veg than fruit to help lower his sugar. It worked very well. Good luck!

PN, your Potatoes Dauphin look amazing! I wasn't here to answer your question about cook time, but I'm sure the potatoes turned out well. DH made Shrimp Scampi last night, and tonight we are having burgers.

I will plant red dragon wing begonias today - large urn on front porch, wall planter, two smaller urns on steps. We'll get geraniums for the deck and patio planters later this week. Warm temps in the forecast with no rain in sight.

I shall have potatoes for lunch. That was dinner last night too. They were a little soupy at first but by the time they cooled they had mostly thickened up. I bet they will taste even better today after sitting all night.

I wish I could get some plants in. One day I shall get it together.

Recipe says to let potatoes stand for 10-15 minutes before serving. This allows the potatoes to absorb the cream and cheese.

You don't have to do everything all at once. Take your time and don't wear yourself out. Last year, we went to the nursery, bought our flowers and potting soil, and between the two us, planted everything that day. I could barely move the following morning - every bone in my body ached :eek: Not doing that ever again! We planted dragon wing begonias in front of the house a few days ago. DH has gone swimming, and we'll head out to the nursery for geraniums and more potting soil when he returns. I'll take my time planting over the weekend.

Dinner last night was pecan/pretzel/Parm-crusted walleye. Delish! Tequila/lime/ honey-marinated chicken thigh skewers with onions and peppers tonight.

When they were almost done, I added cheddar cheese, fresh spinach and diced tomatoes. Baked until fork tender. Let it cool and put it in the fridge. This morning I warmed it in the microwave and added cheese eggs on top. Yum!

That looks really good! And healthy too. I have all the ingredients you mention but would need to cook potatoes. We have a lot of eggs right now because I forgot how many we already had when we went to the Farmers Market and got two more cartons. I hard-boiled 4 of the oldest eggs today and will use to make egg salad tomorrow.
 
After grilling chicken thigh kabobs last night, DH announced that he is done cooking/grilling for the week. I told him that I would make dinner tonight as long as he'll go to Nino's for some ingredients. Featured this week are Nino's crusty Italian boule and deli meats/cheeses that made me think a mufuletta would be good on a day that is too hot to cook. I will make my own tepenade to complement Polish ham, hard salami, and Provolone cheese. Yum!

We got geraniums and more potting soil yesterday and will work on planting over the weekend. Red dragon wing begonias on porch and a variety of pink geraniums for deck and patio.

Excited that my CSA, Community Supported Agriculture, starts on Friday! Sunchokes, asparagus, new potatoes, peas. I love sunchokes. You have to cook them, I sliced them, and put them in the air fryer, they taste like crisp sweet potato chips.
 
I’m north of Boston for my brothers funeral this week. I could only find one highly rated restaurant that I could eat at. Not to be a snob but with food allergies, I need them to offer safe, correctly made items.

The Fat Greek. Well, I didn’t know some places mix the type of meats in their Gyros. I ordered the one with lamb and beef. Thought it was odd but no other combo was appealing. I was unimpressed. The two flavors together were not tasty to me. The meat was over cooked and dry. The tzatiki was excellent tho. There were 6 seasoned French fries stuffed on top inside. Ok that was weird but I pulled them off and they were tasty.

I went to the grocery store for tea and snacks. Dinner was tea, a handful of sea salt chips and 2 mini Milky Way candies. When you’re more tired than hungry.....
