I can’t think of any root veg I’m allergic to. I was surprised to learn that as a root veg, it is mainly eaten raw. Ranch dressing goes good with anything plus I’m going to assemble my tzatziki today too.
Just made tzatziki here for later!

I had never heard of jicama until the late '90s/early 2000 when it was featured on just about every cooking show I'd watch. It also appeared as a component of salads in restaurants. I bought it occasionally, but it is so difficult to pare and cut that it's hardly worth the effort. I rarely shop the exotic veggies aisle at Nino's where they have jicama and haven't thought about getting it in a long time. Jicama has a crunchy texture and makes a nice addition to a crudites platter with a dip. Be careful peeling and cutting it!
When I picked it up I was thinking, wow, this will be like peeling a rutabaga. My kiddo says she doesn't like jicama and won't eat it. So, it's all on me. I like the suggestions you all have mentioned but I also want to see how it tastes when it's cooked - in a stir fry maybe? Gotta look online some more.

PN, your produce and dry goods boxes always make me think of the contestants' baskets on Chopped. The baskets have four items that the chef contestants must use in a single dish, i.e. appetizer, entree, dessert. Their time is limited, so they have to think fast, work quickly, and figure out how to repurpose the four basket items into something delicious. The eggplants and yellow squash would be awesome in ratatouille :)
I don't know if I could survive one of those shows but that truly is what it's like around here. It keeps my mind and hands busy for sure. I got most stuff washed up and it's draining. The red grapes are so sweet I may not share. hehehe!

I did both produce pick ups this week. Mainly because kiddo & boyfriend finally got a rental house. So they'll need food to stock their new kitchen. They both have jobs and are really good about their money but fall into that "there's nothing left over each month" kinda budget. My extra food won't go to waste.

Microwave is toast - literally. New one ordered but it will be a month! I will really miss having one.

Jicama is a good, crunchy, low-calorie alternative to chips - you can slice into sticks and dip into hummus.

Trader Joe’s carries tortilla wraps made from jicama - haven’t tried.

Easiest way to peel jicama is to cut it in half with a large sharp knife and then cut it into quarters and then into eighths. Then you have a much smaller, manageable piece to peel with a paring knife. Kind of like peeling a cut and quartered apple, if that makes sense?

Fourth of July holiday in the United States! What yummy plans do people have for celebrating this year?

I am planning on making a nice pasta salad. And something using "Bok Choi", I got two huge ones in my CSA.

I had hoped we could get my siblings together for the 4th this year, but my sister was scheduled to work today and Monday. She lives an hour away and doesn't have transportation, and it's too much driving for DH to pick her up and take her back home in one day. She said she'd make sure she can have a couple of days off for her birthday in early August, so we'll plan the gathering for that weekend.

DH and I are finally going to Mexican Village today - haven't been there since December, 2019. Mexican Food Utica | Family Restaurant | Mexican Village Restaurant (mexicanvillageutica.com) We'll grill naan pizzas tomorrow and probably have fish on Monday. Last night we had New York strips with corn on the cob. Neither of us finished our steak, so from now on, we will share one. The corn was OK - not Michigan corn, for sure. Can't wait for that in mid-August.

We will be having a quiet weekend, staying inside due to the heat, hoping not too many neighborhood fireworks - we preferred going to see the city/town fireworks show in previous years.

DH just happened to check Mexican Village Facebook and noticed that they are closed for the holiday weekend. Guess we'll have a quiet weekend at home. Take out one of the days :D

We were trying to make dinner plans with friends for tomorrow evening and our first two restaurant choices are closed for the holiday. But we found a place that will be open, has Turkish food. Haven't been there for a long time.

We had grilled brats tonight after DH bought a replacement part for the gas grill at the hardware store. Now it's working great again. We've had it a long time and he was saying maybe it's time for a new grill, but $29 for a new part beats buying a new grill.

Bok choi is awesome, especially baby bok choi. I don’t like a lot of cooked greens but love bok choi. It’s mild. I mix with water chestnuts and a squirt of Bragg’s aminos when I’m just cooking for myself but I’ll add tofu, crushed peanuts, and peanut sauce when cooking for others…if you add some rice, it’s a solid GF & DF & vegan meal. (Spouse is GF & DF). Pre-Covid, we entertained a lot and this was a staple go-to for when our guests were kosher. It’s good with chicken, too.

Dinner today will be from the farmer’s market. The bi-color super sweet corn has just come in.

Sweet corn goes so well with mashed potatoes and sliced fresh tomatoes, so that is what we will have for dinner. I’ll make some beer cheese gravy for the potatoes.


I always double this recipe, and although you can use any type of cheddar I like to use sharp white cheddar.

Beer Cheese Gravy

2 tbsp. butter
2 tbsp. all-purpose flour
2/3 c. beer, such as IPA
2/3 c. milk
1 c. shredded white Cheddar
1/2 c. cheddar, shredded
1/2 tsp. garlic powder
1/2 tsp. smoked paprika
Freshly ground black pepper



  1. In a medium sauce pan over medium heat, melt butter. Whisk in flour and cook 1 minute. Slowly add beer and milk to flour mixture, stirring constantly. Continue whisking over medium heat until mixture has thickened, about 3 minutes. Remove from heat and stir in cheese until fully melted. Season with garlic powder, paprika, salt and pepper.

I spent most of Friday & Saturday struggling with a migraine and tummy issues related to meds. I didn’t eat much. So today I had ridiculous cravings. Cesar salad, hotdog with mustard and chocolate. I have yet to eat a hotdog. Elsa is going to visit tomorrow which means I can’t grill them yet. Maybe I can wait until Wednesday to grill them. I think I’ll do the entire package then freeze them. At least when I reheat them they’ll have the grilled flavor.

We ended up having grilled ahi tuna tacos on the 4th, BLTs yesterday. DH asked if I would make baked beans, so I soaked navy beans overnight, drained them, brought them to a boil, and now they are simmering gently. When the beans are cooked, I'll assemble them with bacon, onion, brown sugar, vinegar, mustard, ketchup, bourbon, and seasonings. We'll have them with grilled salmon tonight. I will post about our grocery escapades on the 4th on the grocery thread.

Pepper burgers on July 4th for us and reruns of "One Step Beyond", thinking how cool it would have been to meet the show's host John Newland.

I have found the best way to roast peppers is in the air fryer. A few minutes, turn them, after 10 minutes, pop them into a Rubbermaid container, another 10 minutes, the outer skin peels right off.

@PayrollNerd, sorry you are feeling sick, hope you are doing better.
