Because he didn't plan for a bloody mess.

He may have started by strangling her and she fought back. Her babies were in that house. She may have grabbed the knife to defend herself, and he got cut taking it from her and fatally stabbing her with it. She didn't go down without a fight, IMO.

That's why he needed to find a way to dispose of a body with THOSE injuries.
