Why do I have a feeling that Casey is demanding to testify? She did for her check fraud charges and since she did get away with minimal consequences she believes that she can defend herself again?

No, she didn't testify at her cheque charges file - she agreed to plead guilty (said yes) and said she was sorry and wished she'd been a better friend to Amy - but no testimony.
She got a normal sentence for a first offense - and it worked out to be time served.
