No, Baez is mocking Dr Vass in a way that he might as well be putting air quotes around scientist. I didn't hear Beaz actually mock Dr Vass' lisp.

JB: what they did was different than buried remains. what is critical to remember what happens when you heat it up and when the compounds come off naturally. He does not have any peer review that has to do with bodies in trunks. Or children.

Jose is leaving out the most important part...why the test was so important...and why testing every piece of garbage was not deemed necessary for an odor signature. There was a very real need to determine if a child was alive or dead.
