Agreed. She could have used laxatives to get the effect she was after. However, I don't even think she did that, she just told everyone she had diarrhea instead. Allegedly her daughter saw her go to the bathroom a lot (if memory serves me correctly) but that proves nothing. The day after, she made a long car trip - in her infamous cream pants - when she supposedly was still ill. However she never stopped to use the bathroom anywhere (for toileting at least), but did have an emergency poo in the bushes. Yeah right. Then on the Monday when she was at hospital, she couldn't rustle up a stool sample, instead trying to pass off urine as watery stools.

Her pathology results were mostly unremarkable, certainly nothing indicated anywhere near the problems her victims were experiencing. She simply was not sick.
He did. Well, not warning so much as telling some of his relatives about his concerns that she was poisoning him. His Dad knew prior to the lunch. Although they weren't invited to the lunch, and may not have even known about it, Simon's brother was also aware of his concerns, and a cousin even brought it up to Simon himself. A doctor/church friend was also aware and didn't take it further. I guess if several people don't think it's a big enough deal to take action on, then you start to think maybe you're being crazy or dramatic, especially if you appear to be the only target.
